Chewy Cocoa Brownies with Chips

  • Preheat oven to 350 degrees. Butter a 13x9 baking pan. (Yeah, you can use shortening or margarine.)
  • Melt butter in a medium saucepan over very low heat.
  • Combine the flour, sifted cocoa, baking powder, and salt in a medium bowl and set aside.
  • Add sugar to melted butter and stir until dissolved.
  • Stir in 2 tablespoons of water.
  • Stir in vanilla.
  • One at a time stir in the eggs until well blended.
  • Stir flour into mixture in saucepan. Stir just until well blended.
  • Spread mixture into prepared baking pan.
  • Sprinkle a layer of chocolate chips over the prepared mixture.
  • Bake 18-25 minutes or until a toothpick inserted into the center comes out slightly sticky. (Or with moist crumbs) At 5300 feet with a 350 degree oven (internal thermometer) it takes 21 minutes so check at 18 minutes to see how yours are doing.
  • Best eaten very warm or very cool. When warm the chips are soft and melty, blend with the rest of the brownie and are quite a treat. When very cool the chips set and provide a different chocolate experience.
